Foodie Friday: Fiesta Queso Burritos

Last week I shared with you this recipe that I made using one of the Velata Artisan Rubs and this week I have another Velata creation! It's no secret that my family loves enchiladas, burritos, tacos, etc. So this was pretty easy to come up with! My husband isn't a huge "bean" fan, but I thought I'd give it a try! And these were delicious!


1 pound hamburger
1/4 C diced onion
2 cloves of diced garlic
1 can pinto beans (drained)
1 can kidney beans (drained)
1 can of diced tomatoes (with green chiles)
1 8oz container Velata Fiesta Queso Cheese
Shredded cheddar cheese
Taco shells


Brown hamburger, add onion and garlic and saute for 2 minutes. Add tomato, beans and Queso cheese. Stir until cheese is blended.

Put a little of the filling into the bottom of a greased 9x13 pan.
Add filling to each shell with a spoonful of shredded cheese. Adding the rest of the filling over top of filled burritos. Bake on 350 for 25 minutes.
