Chicken and Broccoli Mac and Cheese

Some people might think that the words broccoli and Mac and cheese shouldn't be in the same sentence. I was sort of one of those people. But this macaroni and cheese will not disappoint you. It is delicious! And if you are looking to eat healthier, this is the mac and cheese for you because it is 21 Day Fix approved!

21 Day Fix; Fixate

Pretend I said it was 21 Day Fix approved. Because I know that to some people that is going to mean boring, bland, gross, not as good as "regular" mac and cheese. But it is none of those things. This is actually one of the best macaroni and cheeses I've ever ate. Super creamy and so full of flavor!

If you are still unsure, just please, take my word for it because it is amazing, and go make this Chicken and Broccoli Mac and Cheese.

21 Day Fix

  • 3 C. cooked chicken breast, boneless, skinless

  • 4 C. chopped broccoli florets, steamed

  • 1 tsp. sea salt

  • 1/2 tsp. ground black pepper

  1. Cook noodles to package directions

  2. Melt butter in large saucepan on medium heat

  3. Add flour, whisking constantly for 1 minute

  4. Slowly mix in almond milk, whisking constantly for 1-2 minutes, until thickened.

  5. Reduce heat to low. Add cheese, whisking constantly for 2-3 minutes, until melted.

  6. Add chicken, (pre-steamed) broccoli, salt and pepper. Stir constantly for 1 minute until heated through.

21 Day Fix

I actually thought this tasted even better the next day, reheated. Either way, it was delicious and you really should make it.

Container breakdown:

1 Green
1 Yellow
1/2 Red
1/2 Blue

And this should make (8) 1.5 C servings

  1. would love to win the fixate cookbook!!!

  2. What are the container counts for this if following 21 Day Fix? This looks & sounds amazing!!! Yum!!

  3. Hi Kim,

The serving for the mac and cheese is 2 cups!! And the container breakdown is:

    1/2 green
    1/2 yellow
    1/2 red
    1 purple
    1/2 tsp

  4. How many does this serve?

  5. How are there no blues in the container count if there is cheese?

  6. Amanda- Great question. It looks like there were several corrections made to the Fixate cookbook after it was published. This was one of those recipes- Here is what I found:

Macaroni and Cheese with Broccoli and Chicken
(Makes 8 servings, approx. 1 ½ cups each)

Container Equiv: 1 Green 1 Yellow ½ Red ½ Blue

    I hope that helps!

  7. This is delicious but definitely doesn't make 8 1.5 cup servings. Did I do something wrong or is it actually less servings?

  8. Jennie, to be honest, I think the recipe is just wrong. After Fixate came out there have been multiple corrections to the cookbook and this is one of the recipes that has been altered. I personally feel like it was probably closer to 4 servings?

  9. How is this one purple? And no blue?

  10. Hi Stacy!

When the Fixate cookbook was printed it had errors.
The actual containers are 1 green, 1 yellow, 1/2 red and 1/2 blue. I have this in another comment but I will edit it into the post for clarification!

    Thanks for asking about it!

  11. There's no way this is 21 Day FIx approved if it requires butter.....

  12. I took the recipe directly from the Fixate cookbook! So you'd better take it up with Autumn! ;)

  13. It says 4 oz of pasta, that is like for one person?? How much pasta should be used??

  14. Hi! What brand of butter do you use? How do you know it's grass fed?

    Thanks! :)

  15. I made this tonight and my husband disliked it so much he settled for a bowl of cereal instead :( I was so excited to try this recipe, but it looks like I will not be making it again.

  16. What a bummer! What did YOU think? I thought it was delicious and even my kids love it, broccoli and all!

  17. LOL! Best answer ever. I realize this is nearly two years old, but I have found that 21 day fix eating plan is so not boring and people are often surprised by how flavorful healthy food can be. <3

  18. Hello! I am not doing the 21 Day Fix but I’m trying to better my eating habits.

How many calories is in this for one person for one serving?

  19. It is 245 calories per serving (per the Fixate cookbook)
