Foodie Friday: Turkey Tacos and Cauliflower casserole

If the title didn't pull you in, I'm hoping that the picture will. Because personally, if I saw that title, I probably would think that is a meal I wanted the recipes for. However I saw a couple of great pictures that made it look enticing enough to try out and I'm glad I did!

I found both of these recipes via Pinterest and since we are doing what we can to eat healthy I want to give them a shot. I ended up changing a couple of small things in both, but I'll tell you about that in a minute.

First, Turkey Taco lettuce wraps:

I found these at Skinnytaste.com and they were amazing!

What you need: (from skinnytaste.com)
  • 1.3 lbs 99% lean ground turkey
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1/2 small onion, minced
  • 2 tbsp bell pepper, minced
  • 3/4 cup water
  • 4 oz can tomato sauce
  • 8 large lettuce leaves from Iceberg lettuce
Brown turkey in a large skillet. When no longer pink add dry seasoning and mix well. Add onion, pepper, water and tomato sauce and cover. Simmer on low for about 20 minutes.

Wash and dry the lettuce. Place meat in the center of leaf and top with tomatoes, cheese and salsa or whatever you prefer. (Toppings extra points)

What I did differently: I didn't have any tomato sauce and so I used a little salsa. It was delicious and it's only 10 calories for 2 tbsp.


And next, Garlic Cauliflower Casserole:

Garlic Cauliflower casserole

This recipe came from Riches to Rags by Dori and here is her recipe:

  • 1 fresh whole Cauliflower
  • 4 slices of white cheddar cheese
  • Sliced green onions or dried onions (desired amount)
  • 1-2 teaspoons of minced garlic (I used 2)
  • 3-4 Tablespoons of butter (I used 4)
  • 1/4 cup of Parmesan cheese or desired amount
  • Salt and Pepper
  • Dried parsley flakes
Take your whole Cauliflower and cut off the end so you just have the Cauliflower. 
Cut it or break it up into chunks just like the picture below. Place in a glass dish.  

Sprinkle minced garlic on top. Break up your cheese and tuck it all around, sprinkle desired amount of onion and parsley flakes.  Pour melted butter all around the top and then top it with the Parmesan Cheese, salt and pepper. 

Bake is at 350 degrees for 25 minutes. (Until Golden brown) You want it to be perfectly tender and not crunchy. If it is still crunchy put it back in. 

What I did different: Since I am trying to eat better, I didn't use the 4 slices of white cheddar cheese. Instead I used 1 slice of muenster and broke it into small pieces and spread it out. I also used about 5 garlic cloves and cut them up very small. I only used 2 tbsp of butter and 1/8 c of parmesan. (Did I even make the same recipe???)

Both of these recipes were amazing and I will make them again for sure!

  2. I need to try out using lettuce wraps for tacos and burgers. I always think I will miss the bread too much, but maybe that's why all my pants are too tight ;) These both look like great recipes. Thanks for sharing them!
