Vegetable Beef Soup

Happy Friday, my friends. I have an awesome recipe to share! I've had this recipe for Vegetable Beef Soup for years but I've just never made it.

Travis and Zach have asked many times for me to make something like this, but I'm not the biggest fan and I always just put it aside. Then last week I thought I would look through my big stack of recipes that I've never made and I came across it. So over the weekend I grabbed the ingredients that I didn't already have and put it on my menu plan for this week.

Vegetable Beef Soup

Ingredients:

1 pound of ground beef (or ground turkey)
1/2 cup chopped red onion
2 - 14 oz cans of beef broth*
1 - 26 oz jar of pasta sauce with chunky vegetables in it
1 - 16 oz package frozen mixed vegetables (carrots, green beans, corn, peas)
1 cup of water
1/4 teaspoon black pepper

Directions:

1. Cook beef and onion in large pot over medium-high heat until brown, crumbling hamburger as you go.
2. Drain, if neccessary, and then return to stove.
3. Stir in broth and other remaining ingredients
4. Cover and bring to a boil
5. Uncover, reduce heat and simmer 15 minutes

One of the awesome things about this soup is that it is actually a Weight Watchers recipe. I didn't tell anyone until afterwards and I knew they loved it because I didn't want that to taint their thoughts. Everyone thought it was great and I will be making this again soon!  The ONLY thing I would do different is make sure I have some chunky tomatoes in mine because my pasta sauce didn't have any. So I'd add some yummy diced tomatoes!

I also thought it tasted even better the next day. Maybe something to do with the flavors blending? I don't know, but it was delicious!
