Pollo Asada Rice Bowl

A while back I shared my first couple meals I had prepared from a Wildtree freezer Meals workshop I attended last fall. You can find the Ranch Chicken Chili HERE and the Apple Balsamic Pork Roast HERE.  And I am excited to share another. We made 10 freezer meals total and ate them rather quickly. I was sure that there would be at least a couple that I didn't love, but I soon found out that would not be the case. We loved every single one of the freezer meals we made.

I wasn't sure how this Pollo Asada Rice bowl would go over in my house because Travis does not like rice!

Pollo Asada Rice Bowl

  • 2 lbs boneless skinless chicken breasts or thighs

  • ½ medium onion

  • diced 15 oz can of diced tomatoes

  • 15 oz can of black beans, drained & rinsed

  • 1 cup frozen corn

  • 2 tablespoons Wildtree Spicy Carne Asada Seasoning

  • ½ tablespoon lime juice (provided at workshop)

  • 1 teaspoon salt

  • ¼ cup water



  1. Mix all ingredients into freezer bag.

  2. Remove air, seal & attach label.

  3. Double bag and freeze.


Additional ingredients at cooking time:

  • 2 cups uncooked brown rice or quinoa

  • 8 oz shredded cheddar cheese

  • 1 sliced avocado

  • ¼ cup cilantro, chopped (optional)


To prepare:

  1. Thaw in fridge.

  2. Place contents of bag in crockpot.

  3. Cook on low for 8 hours.

  4. Near the end of crockpot cooking time, prepare rice/quinoa according to package directions.

  5. When making the rice/quinoa, substitute 1 cup of water with 1 cup of liquid from the crockpot.  (This will add flavor to the rice/quinoa.)

  6. After 8 hours of cooking, use fork to shred chicken.

  7. Serve by placing rice/quinoa on plate then add chicken mixture.

  8. Top with shredded cheese, avocado slices & chopped cilantro. Serves 8.

This was another hit with my family! We all loved it and I have made it twice since I originally made it at the freezer meal workshop!
