BBQ'd Chicken Nachos

Football season is fast upon us and even though my team isn't off to a great start, I have confidence in them that they will get back to the Big Game for the THIRD year in a row! But I'm not here to talk about football, I'm here to talk about Game Day FOOD! Because that is just as important as the game right?

I love football parties and preparing all sorts of food. But I especially love making tailgating food that isn't the normal. That is what I love about these BBQ'd Chicken Nachos!

Nachos are ALWAYS a hit in my house and we rarely make them exactly the same as the last time. This time I wanted something completely different, so I decided to marinate my Foster Farms Fresh & Natural Chicken in some delicious Sticky Sweet Stubb's BBQ Sauce. I headed off to my local Fred Meyer to gather my ingredients!

Stubb's sauce is new to me and I saw they had a Honey Pecan flavor! Uh, Honey Pecan nachos? Yes Please! But I was a little bummed after checking FOUR stores that didn't have that particular flavor. Luckily they had this amazingly sweet Sticky Sweet sauce that sounded just as wonderful.

Stubb's sauces are gluten free. There is no high fructose corn syrup, artificial sweetener, preservatives or flavorings. And you can feel good about feeding it to your family!

Now, I won't lie. I can't even sugar coat it. I don't do the BBQing in the family. My husband always does. But right now he is out of town and it was left to me, with some assistance of my dad. And our Chicken got a tiny bit crispy on the outside. But luckily the inside was perfect!

I ripped all the chicken off of the bone so it was already to pile on my nachos!

A couple of things I love about Foster Farms Fresh & Natural Chicken is that it is always fresh, 100% natural with no hormones or steroids and it is locally raised in the Pacific North West. And, it is delicious!



So I grabbed out some tortilla chips (you can find out how to make your own here) and then started to pile on my ingredients.

After tortilla chips the next goodie in line is all that amazing bbq'd chicken I just shredded.

Of course what food you like might differ and that is ok, but I love Chili con queso. And if you love it as much as me then you'll be piling it on thick like I do!

Salsa comes next. I'm not a fan of food that is majorly spicy plus my food is typically shared with my littles so I usually stick with mild spiced foods. But I love my salsa to be Chunky! The chunkier the better! And I like lots of it!

More cheese you ask??? Yes! Why not? If you don't like more cheese, we can't be friends!

Then I'm going to top it off with some sour cream and olives. I'll be honest, I love sour cream but this is more than I would typically use. If you've ever used the squeeze sour cream then you probably understand my problem!

Now that our nachos are piled high, it is time to dig in and enjoy these delicious bites!

Ingredients:

Foster Farms Fresh & Natural Chicken
Stubbs BBQ Sauce
Tortilla Chips (you can make your own, check it out!)
Chili con queso
Salsa
Mexican shredded cheese
sliced olives
sour cream

  1. Marinate your chicken in bbq sauce

  2. grill chicken; shred

  3. lay out tortillas on your plate

  4. add shredded chicken

  5. add chili con queso

  6. top with salsa

  7. sprinkle on shredded cheese

  8. add olives
