Breakfast Burrito

I've been working really hard on changing my eating habits. And while I still make lots of casseroles or pizza, I really try to make better versions of those foods. We can't always be perfect! I share plenty of non healthy food, but I am trying to share more of an assortment!

Today is one of those days that I am sharing a really easy, yet healthy option. Everyone in my house loves this breakfast burrito and I eat them for any meal. I'm not picky! Plus, it is 21 Day Fix approved!

Breakfast Burrito

For years I have avoided corn tortillas because they always rip when I bite into them and then I just have a huge mess! But then recently someone told me to toast them on each side first. Not for long, just a moment on each side and it doesn't the trick, they do not rip! I have forever changed my taco/burrito eating ways!


Next I cook my egg whites. I do a 1/2 c of egg whites and let them cook.


And I use about a 1/2 c of turkey sausage


Then just a small amount of cheese


And then I add it on to my heated corn tortilla shells and roll it up!


  • 2 corn tortillas

  • 1/2 C. Egg Whites

  • 1/2 C. turkey sausage

  • 2 Tbsp. shredded cheese

Heat corn tortillas on both sides over medium heat, set aside
Scramble egg whites
Add in turkey sausage
Top with shredded cheddar cheese
Scoop into heated tortillas

Enjoy your breakfast burrito!

½  cup of egg whites - 1 red
turkey sausage - 1 red
2 corn tortillas - 1 yellow
shredded cheese - 1 blue
