Foodie Friday: Baked Tacos

Have you noticed a food theme? If it's tacos, enchiladas, nachos, etc. my family eats it.

So it should be no surprise that I have another Mexican food dish to share today. I've seen these Oven Baked Tacos floating around Pinterest for quite some time and I finally made them last week. I will just say: So Good!

Here is how you can make your own:

1 lb ground beef
1 can of diced tomatoes
1 (16 ounce) can refried beans
1 cup
shredded Colby-jack cheese
12 hard taco shells
Taco seasoning (I make my own)

Brown your hamburger, drain. Add your taco seasoning, the can of diced tomatoes and refried beans and mix together. Line your taco shells in a 9x13, standing up. Fill taco shells, add cheese.

Cook on 400 for about 10-12 minutes, or until cheese is melted.

Not quite as pretty once they were cooked.

Top with additional condiments if you desire. Salsa, tomato, lettuce, guacamole, YUM!
