Who does Family Nights Out? We do occasionally, but way more so we do Family Nights In. I love doing game nights with the kids, or movie nights that typically have pizza included. But this past weekend I wanted to try something different.

We stuck with a movie night, but for dinner I decided to do Fondue. After mine and Travis' anniversary dinner at the local fondue place I was excited for the kids to experience something similar. And while it wasn't close to be exact, it was fun and they really enjoyed it.

Of course I had to make some modifications because I wasn't about to put a boiling pot in front of our 3 and 5 year old, but they still enjoyed every last part.

But first I need to back up a little.

Do you ever get to the store and have an idea for a dinner but you don't know what all goes into the recipe? Or maybe you go grab groceries and are just at a loss at what you are going to make that week? Well not anymore!

Like those times I talked about before when you are sitting at the grocery store still trying to figure out what you are making for dinner. So I decided that I wanted to make a fun fondue for the family like the one T and I had for our anniversary dinner. Except I really had NO idea where to even start. Thank goodness for Google and my phone because I was able to look up some recipes to find just what I wanted.

I wanted to start with a cheese fondue, then do a meat and then a chocolate dessert. I was already at Walmart getting my new phone so I got the food I needed too and was ready to cook!

I found a cheese fondue that sounded pretty great. Garlic, Worcestershire sauce, dry mustard and shredded sharp cheddar cheese.

Next I did the meat. Instead of having multiple meats like T and I did I just went with chicken. Because chicken is safe, right? I marinated it in a teriyaki sauce and then instead of letting the littles use the fondue skewers over boiling vegetable broth I just cooked all the chicken in the broth at once and then scooped it out. It worked pretty well!

And last I did a chocolate s'mores dessert.  3 chocolate bars, let it melt then add marshmallow cream. Once it was melted and in the little bowls I sprinkled a little graham cracker crust over the top.

It was all amazing. Plus I had a ton of stuff to dip into these items.

For the cheese I did crackers, bread, apples, carrots. The meat consisted of teriyaki chicken, sliced mushrooms, whole mushrooms, onion and potato. And the chocolate had graham crackers, marshmallows, strawberries, apples, pineapple and rice krispies. Obviously I had the most fun with the dessert. I think it was out favorite... even though it wasn't quite smooth, it worked perfectly.

I have to say, the kids had so much fun. They loved the food and they loved the fact that it took me a long time to prep so by the time we got around to our VUDU movie time it was already past their bedtime so they got to stay up extra late!

One thing that is awesome ---> Our SmartTV has a VUDU button right on it! It makes it extra easy to watch our FREE movie that comes along with the Walmart Family Mobile Plus plan!

Chicken and Rice Enchiladas

Quite a while back I found this delicious recipe for a Chicken Enchilada Rice Casserole on Pinterest. It looked delicious and I couldn't wait to try it. I made it and it was, like I thought, delicious. But there was one problem. To me, and to my husband, we felt like something was missing. It was delicious, but felt like it was more of a filling that the full dish.

So I decided a couple of weeks later to make it again, but this time I put it in a tortilla shell, then baked it. And then it gave it a more "finished" feeling. And was just as delicious as before! Now I have Chicken and Rice Enchiladas!

I start with boiling the chicken then I use my Kitchen Aid Mixer to shred it. That is one of my favorite ways to use my Kitchen Aid!

If you love cheese like I do, feel free to add some more cheese into your tortilla. But you don't have to because it will still be cheesy enough!

Ingredients:

  • tortilla shells

  • 3 cooked chicken breasts, shredded

  • Uncle Ben's 90 second Basmati rice

  • 20 oz. Enchilada sauce

  • 1 can (16 oz) refried beans - I use vegetarian just because I always buy that kind, but you can use regular also

  • 1 cup shredded white cheddar

  • 1 cup shredded Monterey Jack cheese

  • 1 can kernel corn



  1. Preheat oven to 350 F degrees.

  2. Add a small amount of enchilada sauce to bottom of pan to keep tortillas from sticking.

  3. Mix together all ingredients, setting aside some filling and a 1/2 c. of cheese to use for the top.

  4. One at a time, add filling to tortillas and roll up, setting into pan fold down.

  5. Add remaining filling to the top to cover tortillas and top with cheese.

  6. Bake for about 25 to 30 minutes and the cheese is bubbly.

  7. Enjoy!

Delicious, right? We really felt like adding the tortilla and making this into Enchiladas really completed the meal!

It is no secret that I love the warm weather. The hotter the better.

During the Spring our area experiences all types of weather. We see rain, snow, hail and lots of sunshine. And because of that the kids are always outside playing. Some of their favorite activities include swinging, sliding, rolling down the hill and playing in the sandbox.

With the kids spending so much time outside there are bound to be stains on their clothes. A couple of weeks ago Summer went outside to play and I almost asked her to change her pants. She was wearing some adorable blue/green color skinny jeans and I should have known better, but I let her go. She was not outside even 5 minutes and she comes in with huge brown dirt/mud stains on BOTH knees! I wish I would have taken a picture but of course, I didn't. I immediately took them off of her and ran down to the laundry room to put some of the Purex plus Clorox 2 on the knees and let them sit for a few before washing them.

Because I hadn't used Purex plus Clorox 2 before I really wasn't sure this staining fighting detergent would work. But because it is safe for colors I knew I could give it a shot and see how the stain turned out. When I took the pants out of the wash I was expecting to still see stains. I was prepared to have to wash a second time but I was pleasantly surprised to see bright clean jeans!

Berry Parfait

Happy Friday!!! This week has been crazy busy and my days are not slowing down in the least.
Our weather has been pretty amazing lately with temps in the mid 60's and the beautiful sun is shining bright. Which means for my family, lots of time outside! We have been hitting up the park, playing in the backyard and going for walks at least once per day!

And while we have some rain in the forecast, we have some days in the 70's too, so I'm looking forward to them and the even hotter days that Summer will bring! But for now, I am looking forward to having warm days to enjoy with my family during our Spring Break, and the fun plans we have in store for us next week!

When the days are busy I want to spend as little time as possible in the kitchen working on meals and that is why I love this Berry Parfait!

Yogurt Parfait

I've never been a huge Greek Yogurt fan. I don't even really love regular yogurt, and something about the texture and thickness is just sort of weird to me. But mixed with other things like berries and granola totally works and doesn't bother me at all.

It is easy to layer with whatever kinds of fruit you like. This time I used just blueberries, but my favorite is a fruit blend with blueberries, strawberries and raspberries. You can use fresh or frozen, just thaw them a bit first and you will be set! I also use plain Greek yogurt, but if you wanted to give it something more you could make it a flavored yogurt too!

  • granola - 1 yellow

  • plain greek yogurt - 1 red

  • blueberries - 1 purple


Layer starting with granola, then yogurt then berries.
Repeat at least one time

I don't just eat these for breakfast. Sometimes they are an afternoon snack, or sometimes they are my lunch. Sometimes even dessert. No limitations have to be set!
