Do you like popcorn? Do you want to help support a fundraiser?

Zachary is selling popcorn for his Cub Scout fundraiser! 
This is the only fundraiser his troop does each year, and the money goes towards the activities they participate in through out the year! 

Any support you are able to give would be great!

Life as a Scout!

Here is my little Cub Scout! 
Zachary started Cub Scouts this year and is already enjoying it so much! 

He is excited to get involved and earn badges! 
I hope this excitement stays because this is something he can do for a long time if he chooses! 
We have already been to a couple of Pack meetings/Den meetings and 
are looking forward to some events coming up!

This is Tyler's new face. He laughs and scrunches up his nose!
Then he laughs because everyone else is laughing!

I got a cute video of him doing it but can't manage to get it loaded on here! 

I have officially finished all decorations for Tyler's Elmo birthday party, and with about 2 1/2 weeks to spare!  I am glad that the week of his party I won't be stressing out with a million things to do or make! 
So come party week I will just have food to get and make. :)

This sums it up

I feel like lately I have been struggling to know who cares, and who really doesn't. 
This includes both family and friends. 
I thought this quote sort of summed it up for me. 

I think that I have had a hard time differentiating between friends and acquaintances.
I'll say, "My friend, so and so" but are they my FRIEND? no... they're not. 
Friends are there when you need them. And when you don't. 
Friends are there in good times and bad. 
Friends don't care if my house is a mess or if it's shiny clean.
Friends don't talk behind my back. 
If there is a problem, they say it to my face so it can be worked through. 

How many people like this do I have in my life? 
I would say only a handful.

Homemade mozzarella sticks

 Here is a quick and easy mozzarella stick recipe. 

What you need? 1 package of egg roll wrappers mozzarella cheese sticks. 
I am making 12 rolls, so I have 12 wrappers and 12 cheese sticks.  

Preheat oven to 350. 

First, lay out the wrapper, put the cheese stick at one end. 
I used a spoon to dampen the wrapper so it sticks together when I roll it up. 


 Start to roll before dampening

All rolled up! 
Lay tin foil on a cookie sheet and spray with cooking spray. 
Put mozzarella sticks on cookie sheet and bake for 20 minutes.
Watch close as mine got brown on one side pretty quick. 
Keep rotating, baking for a total of 20 minutes.

The final product! 
As you can see, the cheese spilled out one end! 

My thoughts on these? 
While they were not the most delicious mozzarella sticks I have ever had, they were not bad. Especially since they are baked, and I made them in less than 20 minutes!


If you would rather fry them, here are those instructions. 


  • In an electric skillet, heat 1/2 in. of oil to 375°.
  • Fry sticks, a few at a time, for 30-60 seconds on each side or until golden brown. Drain on paper towels. Serve with marinara sauce. Yield: 1 dozen.


A lovely weekend (Picture heavy)

This past weekend Travis, myself and the boys headed for the Seattle area because Travis' older sister, Katie, was getting married. We drove over on Saturday morning to Mt. Vernon and it was a beautiful day.

That evening we attended the rehearsal as Travis was a groomsmen, and Zachary was the ring bearer.
It was an amazing view


But this one is my favorite: Make sure you get a good look at Tyler's face.
I am not sure what was going through his head, but it made a cute face!

The next morning we got up and got ready for Katie's big day! The ceremony was quick and to the point. They wrote their own vows, that were really cute and soo Katie. :) And they could not have gotten a more beautiful day.        Here are a few before the ceremony:

Pizza Casserole

This is a delicious recipe I found on Pinterest




This was a quick and easy dinner, that even the kids LOVE!



Here is what you need:




So we have egg noodles, a large can of spaghetti sauce, 3 cups of Mozzarella cheese, 1.5 pounds hamburger (I only used 1 pound) and one package of pepperonis. You also need a 9x13 baking dish.


Boil noodles. Drain. In the meantime brown hamburger.

Next, put a small layer of spaghetti sauce on the bottom of the 9x13 pan.


Layer on 1/2 hamburger,

then 1/2 of the noodles,

half of remaining sauce


rest of the noodles

half of cheese

rest of meat

rest of sauce

rest of cheese

pepperonis (I only used half of package)


Cover with foil and bake for 30 minutes (@350)

After 30 minutes remove foil and bake for additional 15 minutes.


Let stand for 10 minutes then enjoy!

The first day, of 4th grade!

Here is my favorite 4th grader! 



This is what it looks like when Mom tries to take a picture with the sun in your eyes!

We walked to school this morning, and it's so nice out! 
We got to Z's class and met the teacher- who seems very nice!
(My fingers are crossed!)

I was the only parent there, so I didn't stay, and he didn't want me to take pictures at his desk. 
I guess I have to be okay with that. ;)
