Garlic Cheese Pull Apart Bread

I don't even know where to start with this Garlic Cheese Pull Apart Bread because it is possibly the easiest and most delicious thing I've ever made. So I'll just share this:

I found this on 30 Days and within a day I had the ingredients to make it, that is how bad I wanted it!

  • 16 frozen white dinner rolls (Rhodes brand)

  • ½ c butter, melted

  • 1 c grated Parmesan cheese, divided

  • 1 tsp dry parsley flakes

  • 1½ tsp garlic powder

  • ½ tsp Salt

  • ½ tsp Italian seasoning

  • ½ tsp onion powder

  1. Remove frozen rolls from freezer and loosely wrap them in plastic wrap and allow to sit at room temperature for 45 minutes.

  2. Cut rolls in half with a clean pair of scissors.

  3. Mix the melted butter and seasonings together and pour over dough and mix.

  4. Add ½ C of grated cheese and combine.

  5. You want each piece of dough to be coated.

  6. Line the bottom of a 9 inch springform pan with the piece of dough and then top with remaining grated cheese.

  7. Allow to rise in a warm place for 1½ - 2½ hours.

  8. Cover a cookie sheet with foil and place your springform pan on the cookie sheet. The butter will leak out!

  9. Bake at 350 for 20-25 minutes or until center is completely done.

Enjoy! It is so delicious!

Hot Buttered Rum Mix

I remember when I was little and my mom would make Hot Buttered Rum mix, and while I never saw her put any rum with it, I can't imagine her and my dad were only putting it in their coffee or in hot chocolate like I was!

But with the winter months coming up I decided that I wanted to make some for my coffee. So I copied down my mom's recipe a couple of weeks ago and grabbed everything to make it. It is actually really simple but I was glad that I had my stand mixer to use because I don't think mix little hand mixer would have made it through the process.  *Side note: my mom didn't have a stand mixer in those days and she used her hand mixer just fine!*

Ingredients:

1 lb. Powdered sugar

1 lb. Brown sugar

1 lb. Butter (the real stuff)

1 qt. Ice cream (I used vanilla)

2 tsp. Cinnamon

*nutmeg is pictured but I decided not to use any since my mom's recipe didn't call for it.

First, you need to let your butter and ice cream soften. Then add your butter and both sugars to your bowl and mix until completely mixed. You need to make sure it's not clumpy and all the butter gets mixed in.

Then you are going to add the ice cream and cinnamon. Mix really well, scraping the bowl regularly to insure it's mixed.

Finally, put it in a freezer safe container and freeze.  This make a huge batch so I put some in a small container to keep in my upstairs freezer and put the rest in our freezer downstairs.

Now put a heaping spoonful in your coffee or add a shot of rum and boiling water to a cup and have yourself a little drink! This is great to have on hand while your Thanksgiving guests are arriving and wanting something warm to drink!

Slow cooked apple sauce

Happy Friday, everyone! We had a busy week around our house and we are going to have a busy weekend as well. We finally finished Tyler's bedroom and carpet was installed yesterday so this weekend we will be getting it set up for him to have a new bedroom of his very own! I am really looking forward to that, and so is he!

I've also been busy trying out new to me recipes that I've come across on Pinterest! And when I found this Apple sauce not only did I know it would be delicious (because it came from Skinnytaste) but I knew it was going to make my house smell mouthwatering amazing! And it didn't let me down.

First, we washed our apples and got the peeler, slicer, corer ready to go. I had this sweet little helper to work with while her brothers were at school.

Then, we loaded them on and peeled, sliced and cored away.

Then we tossed all of the apples into the crockpot along with a few cinnamon sticks, some brown sugar, lemon peel and lemon juice.

Looking pretty delicious, right?

Let it cook on low for 6 hours, stirring the apples only occasionally. They cook down pretty good, and I just used my potato masher to finish mashing the chunks out at the end. But if you would like your applesauce to have no lumps you could toss it in your blender for a moment too.

And because this came from skinnytaste, you know it's not bad for you! 1 WW point, if you're counting. (I probably should be, but I'm not!)

  • 8 medium apples - I used half Golden Delicious and half Honey Crisp
  • 1 strips of lemon peel
  • 1 tsp fresh lemon juice
  • 1 cinnamon stick - I used 3
  • 5 tsp light brown sugar (unpacked)

  • Cook on low for 6 hours- Simple.As.That

And my kids loved it, as did I! It's a great anytime snack- and will make your house smell amazing!

    Tyler turned 4

My little monkey turned 4 month ago (today) and because I'm behind on everything else, this is no exception! But I didn't want to forget it, or just not do it because I love to share what is going on in his life.

Tyler started preschool at the beginning of October and is loving every minute of it. I wasn't looking for child care, but for a preschool. I stay at home and am capable of teaching him, but what he lacks is social interaction outside of our home. We hit up story time at the library but he needs time away from his mama, with other kids. The first morning he went right off, not really caring what mom and little sister were up to, because he saw the kitchen play set in his classroom. And two and a half hours later when I went to pick him up the teacher said he did great. With one "I don't want to" coming from Tyler when it was time to walk away from the previously mentioned kitchen play set! Oops!

I was skeptical on how it would go. I figured there would be more reluctance on his part, but it's been good. He looks forward to going each time and wishes it was more than 3 times per week. He is making friends and even attended his first preschool friend birthday party a couple of weeks ago.

He loves playing on my mom's Nook. He would play on it anytime she would come over he would barely even say hi before he was asking if she brought the Nook. She put lots of games on there that are perfect for a little boy and he plays with it almost daily.

Tyler is such a good little brother. He loves Zachary so much. And he is an awesome big brother, as he adores Summer. He will do big kid Legos with Zach and a few moments later he is playing babies with Summer.

He can spell his name out loud and write it on paper
    He says everything is "Amazing"
He knows his alphabet and numbers
He still loves Thomas the Train
He loves to watch Daniel Tiger
He has a funny obsession with John Cena.
He says, "Ohhhh my Gosh" but his enunciation that makes it awesome.
He always says, "When I was a kid...."

    Currently, his faves-
Food: fruit snacks and apples and sandwiches and tomatoes and grapes
Song: Treasure (yes, he is talking Bruno Mars here)
    Color: purple
    Friend: Zoie
    Toy: the mouse game
    Book: Thomas and Yummy Yucky
    Animal: Bears and Tigers
What he wants to be when he grows up: Batman

He is 40.5 inches tall and weighs 40 pounds.

    Baked Onion Rings

I've never been an onion fan but my husband loves them. He would eat them like an apple. So several years ago I actually started adding onion to recipes that called for onion instead of skipping that ingredient. And I even add onion to recipes that don't call for it.

So you know something changed when I actually want to eat an onion ring. But not just any onion ring, I needed to find an awesome one. And I like fried food as much as the next person, but I really wanted one that I could bake. When I found these delicious looking baked onion rings over at Sally's Baking Addiction I needed to give them a try. I wasn't disappointed, and you won't be either.

Here is what you need to make these amazing Oven Baked Onion Rings:
  • 2 large sweet onions, cut into 1/2 inch slices
  • 1 quart low fat buttermilk
  • 4 egg whites
  • 2/3 cup whole wheat flour
  • 3/4 cup cornmeal
  • 1 cup panko bread crumbs
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • nonstick cooking spray

    1. Slice up your onions and put the rings into a big enough dish to at least partially submerge your rings. I let mine soak in the fridge overnight but you should let them soak for at least 4 hours.
    2. Preheat oven to 425 degrees. Cover two baking sheets with foil or a silpat mat.
    3. In a bowl, beat egg whites then set aside. In a pie dish, mix the flour, cornmeal, bread crumbs and seasoning together.
    4. One at a time take an onion ring from the buttermilk and dip in the egg whites and then into the crumb mixture until well coated.
    5. Lay the rings in a single layer on your baking sheet.
    6. Once all onion rings are coated and on your baking sheet, spray with nonstick cooking spray. (According to Sally, this is so that the breading will "seal" and allow it to bake onto the onion rings)
    7. Bake your onion rings for 30 minutes, flipping over each ring after 15 minutes and baking for 15 more. Bake until they are browned to your liking and let sit for a few minutes before you dive in.
I thought that these were delicious. They were exactly what I was looking for and I've made them a couple of times since, each time baking a little bit longer to try different levels of crunchiness and so far they have all been delicious!

What do you think about onions? Take 'em or leave 'em?

    Corn Casserole

Happy Friday, my friends! It is getting colder by the day and because of that I love hot dishes. Casserole, soups and stews oh my! But you can't forget the side dishes and this one is a winner!

I love this Corn Casserole and I make it anytime I make potato soup. It's always my go to side dish because it goes great with the soup.

    Sweet corn (drained)
    Cream corn
    1 box Jiffy cornbread mix
    1 C. Sour Cream
    1 stick butter (melted)

Cheddar cheese (set aside for top)

Mix everything together and pour mixture into greased 9x13 casserole dish. Bake 45 minutes.
Take out of oven, sprinkle cheddar cheese over top and cook for another 5 minutes.

Let stand for 5 minutes before serving.

It didn't get any easier and it's delicious! I love quick and easy dinners (and side dishes!)

Braun No Touch + Forehead Thermometer (Review)

Disclosure: I received these products complimentary from Influenster for testing purposes. However, all opinions are my own.

We've all been there. A sick kid in the middle of the night. You don't want to wake them but you have to check if they have a temperature. That is what makes this Braun No touch + forehead thermometer so amazing. You can put it right on your little ones forehead or within two inches and get an accurate reading.

I've been using an ear thermometer for years and had pretty great results. However, there have been many times that I've woken up one of the kids while taking their temperature, or you know how it goes, so many times they do not want to be touched when they are feeling sick. Who wants to be poked and prodded while sick? Not me!

This No Touch thermometer has an on/off button, reads your temperature within 2 seconds and is color coded with green for no temperature, yellow for a slight temp and red for a high temperature.

It can be used for all members of your family from newborn on up and I love the idea of not spreading germs like you might with another type of thermometer.

And as you can see, Summer enjoyed taking the first turn. She didn't mind me putting it right against her skin, or trying it from two inches away! I can officially say that I've replaced my old thermometer with this one!
