Cherry Ice Cream

One of our favorite things to do in the summer is to make our own homemade ice cream. Use an ice cream machine? No way! Who has time for that?? This Cherry Ice Cream is from scratch in less than 24 hours, with no machine!


Several years ago I found a recipe where the blogger promised ice cream with no machine. And I was all about that! I made my own version of a coffee ice cream with peanut butter, chocolate syrup and coffee and it was heavenly.

So naturally, I had to try other flavors, yes? Like Moscato Ice Cream. I promise this tastes as amazing as it sounds. I have made this one many times along with other flavors because there are just so many options!

Here we go ---->
I blended my heavy whipping cream, added cherries

Then added some pureed cherries and the condensed milk

Then I folded it all together until it was blended perfectly.

Once it was blended I added it to a freezer-proof plastic container that has a tight lid fit on it. I say to freeze it for 24 hours, but depending on your freezer it might be less than that or it could be longer.

2 cups of Heavy Whipping Cream, cold
1 can Sweetened Condensed Milk
1/2 c of fresh, pitted cherries
1/2 c of fresh, pitted cherries, blended

  1.  Start with mixing your heavy whipping cream, blending until you have stiff peaks.

  2. Add in your condensed milk and cherries along with the blended cherries and mix until they are well blended.

  3. Pour into a freezer-safe container with a lid.

  4. Freeze for approx 24 hours. (It could be less depending on how cold your freezer is)

  5. Enjoy!

You could easily add some other ingredients to this as well. Chocolate syrup? Pistachios? Brownie? What would you add to your homemade cherry ice cream?

The Lake House

I've been trying for a while to get this posted. To share about The Lake House. But to be honest, it's such a disaster that I've been avoiding it.

We had been keeping our eye on a couple of different lakes for property to buy for a while. It seems that everything we looked at sells the second it hits the market, which makes it hard to even put in an offer. So we saw this house and it didn't sell immediately. We figured there must be something wrong with it and then found out it was bank owned. It was going up for auction so we thought, why not?

We finished the auction as the highest bidder, but the banks minimum wasn't met and it went up for auction again. The second time we weren't the highest bidder but after several days we got an email saying the highest bidder dropped out and asking if we wanted to pay more to get to the banks minimum. After talking about it, we decided we didn't want to do that and we told them no. Another week later we got an email from a realtor telling us the bank decided to take our lower bid and they were preparing documents to sign.

At this point, we hadn't even seen the inside of this cabin. And we were now buying it. We talked to the realtor about getting us in it to take a look and finally met her there one day to check out. (insert puke face emoji here, haha)



We knew going into it that this place was a major "Fixer Upper". Both on the outside and on the inside it needs major work. But the smell walking into this little cabin was overwhelming. The people who lived here before, we were told, had several dogs. The dogs appeared to have been kept in the bathroom and laundry room and had attempted to dig themselves out of those rooms. The floors were torn apart, as were the doors and the trim.

The bathroom was, and frankly still is at the moment, disgusting. The musty/mildew smell is rank. We knew we would have to completely gut it out and it was one of the first places we started on. We've ripped out the shower, toilet and cabinet/mirror. We also had to replace the floor. We have put down new floorboards, put in a new toilet and sink and we're waiting to put in the new shower.



The kitchen is also disgusting. The oven was caked in I don't even know what! There was melted plastic all over the inside. The oven and fridge work and for the time being, they are still there but we will plan to replace them down the road. Right now while we are still working on the house, they'll work. They needed some massive cleaning tho! As I mentioned earlier, the previous tenants had dogs. You can imagine the dog hair found. Everywhere. In the fridge, under the fridge, in the oven. Dog hair in places you should never find dog hair.

The walls were so dirty that we thought they were dark red. But once we started washing walls, they were actually orange. I will share those pictures in another post! There was a homemade backsplash where the people glued rocks to a painted board and screwed the boards to the wall...  Thanks to DecoArt I already have the paint for the cabinets. I really got ahead of myself when I got paint from them! I thought I'd have it painted before we closed the house down for the winter but we weren't even close! So I look forward to painting this spring!



The laundry room only has cabinets and a water heater in it. We've already replaced the water heater and we will need to replace the floor and cabinets and of course, add a washer and dryer. We've talked about adding a sink to clean fish in at some point.



There isn't much to the bedroom. It is one single bedroom that we will have to be creative when it comes to bed placement. It doesn't look like it, but it is a pretty decent size room.



The living room is basic as can be also. The windows in the entire house will need to be replaced at some point. We had to fix the chimney pipe because when we would light a fire in the fireplace all the smoke came straight back into the house. It was gross and the walls were black with smoke. When I started washing walls we soon learned that the paint colors were actually different than they looked. That is okay, they will all be different colors soon anyway!



In the backyard, we will just be cleaning out the weeds and making a deck. Not much to it! We just really want the large deck space as we will be able to watch the sunrise and sunset from the deck. Along with the lake view. I see a lot of time spent on the deck in our future.





The Lake access is the entire reason we wanted this house. To have a place we can go with our family and friends any time we want is what really matters. And I am looking forward to spending a lot of time here.



I will have more posts to come as things updated and I will try to be better about sharing as we go. sharing what's been done in the bathroom soon. But there is just sooo much more to do in this house! It is going to be a while before it is where we want it to be.

San Diego Getaway

About a month ago Travis and I headed to San Diego because Travis had a work conference. Perfect time for me to tag along and enjoy a few days away.  I was only staying for a couple of nights but I was planning to relax and enjoy every minutes of it! (And I have a ton of pictures to prove it!)

Grandpa was with the kids, meals made and in the fridge and activities to do, they were set and Travis and I headed out.



The day we left was on Travis' birthday. We were up at 4 am and out the door shortly after to catch our 6 am flight! So early but we really wanted to make the most of our day once we were there. Flights went smooth and in no time we were in beautiful San Diego.



After our hotel check in we had lunch down the street at Hard Rock Cafe then grabbed an Uber (our first time ever) and headed for the San Diego Zoo. It was the only day we could do it where we could go together. We enjoyed the beautiful weather and all the beautiful animals.





That night Travis and I went out for a pizza dinner at a mom n pop restaurant, where our jalapeno poppers were still frozen/cold in the middle and Travis watched our waitress licking her fingers....

The next day Travis had a day of pre-conference training. I spent the morning browsing local shops and then after meeting him for lunch I took off for the USS Midway. I went back and forth on going there because I was thinking to myself that how long could I really spend there....  but I am so glad I went. It was way more emotional than I thought I would be and it was a great experience. And after 3 hours there, I'm sure I saw less than half of what there is to see.





That night Travis and I were looking for some sea food and ended up at Joe's Crab Shack. I think I was hoping for something a little more local and had no idea this was a chain, but it worked!



The next morning Travis started his conference and I had an entire day before I had to head off to the airport for my flight home. One thing I needed to check off my list was Chick-fil-a. I know, how silly is that? But we don't have them where I live and I love chicken strips so I really wanted to finally go.  I spent the morning wandering near the hotel and the local shops in the area, then I took a Lyft to Balboa Park where I spent hours wandering through rose gardens, cactus gardens, botanical gardens, museums and listening to local artists play.  I even bought a cd from a guy named Nathan Olesen, who has an amazing voice.











After wandering around at Balboa Park I got a Lyft and headed for Chick-fil-a. My driver was nice enough to take me through the drive thru and then bring me back to my hotel.



Once I was back at the hotel I had that awkward amount of time where I really didn't have enough time to go do anything, but I had a lot of time to just sit there in the hotel. So I did what I love to do most, grabbed my kindle and read my book in a kid free, quiet room.

After an hour or two I headed to the airport. There was more than enough time to spare so I took the time to relax and enjoy more my the book I was currently reading. Last minute they were asking for people to check their carry ons. I decided to go ahead and do that because I didn't need anything from it. I grabbed a couple things from my suitcase and took it up to the front counter to check it.

A few hours later I arrived back in chilly Spokane! I was freezing and instantly covered in goosies as soon as I stepped off the plane! I headed for baggage claim where I waited and waited and waited.... And when the baggage wheel stopped and my bag wasn't there I knew it wasn't a good sign. After checking with the airline they said my bag was in Salt Lake City! Whaaat!?! She said they would drop it off at my house the next day! I was so thankful I grabbed out my car keys!! I would have been furious! Around I walked into my house and was asleep as soon as my head hit the pillow!

And my luggage did come the next day!

Thank you San Diego, you were good to me! (even though I was jealous that Travis was there for a few more days and had amazing 70 degree weather!)

This last Friday Summer and I were at Target looking at purses, trying on hats, just having fun while Tyler was at preschool. We got a call from my husband saying, "Do you want to go to Montana this weekend?" Me, thinking about how laundry isn't done, he is at work, boys are at school, says, "seriously?"

Travis says, "Yes, I can get off work early, you want to grab snacks and go?" Me: "yes, I better go home and start laundry!

So I did. I grabbed some snacks and headed for home and started laundry, packed what I could and then went to get the boys from school. Not long after we got back, Travis got home from work, we packed up the car and headed out the door.

On our way we saw a huge herd of elk but there was no where to pull off so we kept going. And right up the road we saw another little group and a perfect spot to pull over. These four were just standing there on the side of the road without a care in the world.

We had a great time on our little visit to Travis' dad's house. He has an amazing view overlooking the Missouri river.

The first night the kids were so excited to open their Christmas presents! Yes, that is a fart machine that Tyler got and yes, the batteries are already dead. (He loves it!)

It was super windy, which made it a little chilly, but it was still really nice!

And staying up entirely too late! Getting the kids to bed in their own house is one thing but putting a 3 and 5 year old in one bedroom in someone else's house is entirely different. There is only a 1 hour time difference but it is more than enough to throw everyone off their sleeping tracks.

And I am exhausted. Their normal bedtime is 7:45 and Friday night we saw midnight. Then back up by 6 am, another late night Saturday (after 10) and up again by 6 am.... add in a 6+ hour drive home.... I.AM.TIRED to say the least.

Maui Day 4

Day four of Maui was pretty bitter sweet. We still had an entire day, but we were going home that night. Our flight didn't leave until 11pm so we were going to make the most of our day, and didn't waste much time!

We cleaned up our room a little and then headed to the beach to play in the water and enjoy the sunshine. It was another beautiful day.

We ate at this place called Captain Jacks Island Grill. I will tell you this: it was seriously the best food we ate the entire time we were there. It is on Front street and if you ever go to Maui, you MUST eat there!

This was our amazing calamri. If you don't know what that is, don't look it up, just eat it. I will say this about Calamari- I love it, but after eating this, I don't know if any place will EVER compare!

After an amazing lunch in Lahaina we went and got a couples massage. It was both of our first massages and we enjoyed every minute. The guy I had was pretty confident in himself and told me all about the amazing massage he was about to give me and when he asked and I said it was my first, he said, "You're in for a real treat!" And I heard about how he was The Rock's massage therapist and all that too.

Then we spent the remainder of our afternoon no other place than the beach. Walking up and down, feeling the waves hit our feet and watching our last sunset.

I seriously could have stared at this view the entire trip. And Travis was probably getting annoyed at me taking a new sunset picture every couple of minutes, but I really wanted to capture it!

Sun is down and now we just walked around and hung out for a while until our driver picked us up.

Maui was truly amazing. We've been talking about going for our 5th anniversary since we got married and I'm so glad we got that time together. At home, we are both always so busy with work (Trav) and home and kids and life in general that we never really have that one on one time like we got on this trip. I love this man to pieces and I look forward to the day we go back and take the kids!
